On TUC, the make up department accidentally spilled all the prepared "Klingon blood" on the day it was supposed to be used on the set. They quickly sent one of the interns down to a local drug store to purchase a dozen large bottles of Pepto Bismol as a substitute.

transwarp was originally going to be reused in the movies and star trek 4 would've seen the enterprise exploring the Andromeda galaxy, but because they needed a way to get rid of the Excelsior, it was decided to drop it.
FACT: The original idea of "These Are The Voyages" was that Riker had constructed a holodeck program that was a completely hypothetical recreation of an imagined pre-Constitution Class starship, the NX-01. The original captain of the first Enterprise was actually Captain Robert April. The commander, Jonathan Archer, and his crew never really existed. The entire series that aired was a holodeck program written primarily by Riker. But the idea was scrapped when it was decided that the fanbase would become highly irate, feeling completely duped for four seasons. So they re-tuned the idea to be a revisit within the confines of Captain Archer's final mission, to help Riker solve a nagging command decision.

Armus was intended to be revisited in DS9, and it would have been revealed that the race that shed "him" was the changelings.
I like this one. I wonder how it would have played out.
Ben Cross (Sarek) was the actor the writers had in mind to play Nero in ST '09 when the character was a Romulan admiral named Deridex - as in the warbird. Abrams put the kibosh on the idea when he found out they already did it with Admiral Valdore on ENT, and rethought the character as a working man.
Time travel, and therefor future Spock, was not originally in the story. They did want to include one of TOS actors in the film, and threw around the idea of doing a cameo with Leonard Nimoy playing Sarek with some minor prosthetics.

It would have gotten old and campy if they kept doing that for seven years. There would have been threads here on Voyager forum asking why Berman and Braga kept having control changing hands for seven years.
