Ah, you've seen the wisps of smoke on the bridge too! A couple of color screencaptures from the episode seem to show that someone just off-camera might have taken a drag off a cigarette during filming and it might be one of those bloopers that many never notice, much like the shadow of the boom mike on the overhead bridge monitors above Dr. Daystrom when he speaks to the M-5 computer towards the end of "The Ultimate Computer."
I didn't notice it at first, either. It wasn't until nitpicker Phil Farrand mentioned the wisps of smoke in his 1994 Nitpicker's Guide for Classic Trekkers that I knew to look for them in the episode. Before this the biggest curiosity about "Day of the Dove" was over whether or not McCoy ever mentioned anything about first contact with the Klingon Empire having been 50 years prior to the episode (the source of the erroneous 2218 date for first contact that prevailed in the fanbase prior to the premiere of Enterprise).
