How different would have things been if Apollo had the nerve to leave Dualla to be with Starbuck in Taking a Break from All Your Worries? Would their relationship have worked out?

I think she's too volatile and self-destructive for any relationship to work out.
Honestly, the best outcome storytelling wise once they did the whole dumb triangle was having Kara stay with Sam and Lee with Dualla. The tension between Bamber and Sackoff worked best that way, and we got the great stuff with Lee/Dee in Sometimes a Great Notion out of it too.
