It would've sent a real "it's not safe out here" message to let the audience know that if Picard, the main character, could get killed then no one was safe.
He was killed off because during pre-production, Leonard Nimoy was tired of playing him and wanted out. He changed his mind after filming.NX_01 Mark said:

A little off topic but I thought Spock was killed off cause at that moment a 3rd movie was unlikely due to lack of box office success from 1st movie.
