Jack Crusher's Age

Cochrane and Crusher aren't the same thing. Cochrane was a retroactive age change and his age wasn't mentioned in First Contact, nor was it a plot point. Crusher's age is a plot point and the first two episodes consist of characters actually doing the math.
 
Time slowed down in 2388 and everyone said fuck it, that felt like four years.

The time dilation caused by the red matter used to try and save Romulus' sun caused it to slow down so that Jack could age appropriately

It wasn't a retroactive age change. Cochrane says in Metamorphosis episode that he was 87 when he disappeared 150 years before TOS, and Enterprise confirmed this by explicitly showing him alive in 2119. Canonically by the math, Cochrane is 31 in First Contact.
