I've seen every episode of TOS and TNG numerous times from watching the reruns all the time as a child and teen. Probably some episodes of all the others I've only seen once.
For movies I've seen TMP a couple times and all the other TOS too many times to count (even TFF). Seen FC too many times to count and the other TNGs a couple times. Seen ST 09 and Beyond a couple times and only watched Into Darkness once in the theater.

I only watch the old stuff now, cos there's no point in hate watching and there's so much great SciFi right now. But I've seen every episode at least 3 or 4 times and it's all on physical media - so it's kind of comfort watching when I dip into Trek. Honestly, I can spend as long choosing an episode to watch as actually watching it.

DS9 - Rarely because the picture quality is so bad. It's also a commitment, because it's hard to dip in and out of.
VOY - I started making episode posters for this show during lockdown, so I've been watching and episode or two a week since 2021. Again, you can dip in and out.
ENT - Like DS9, you kind of need to watch in order, I last did a run through about 6 years ago. The show had some serious issues.
DSC - gave up in Season 3.
SNW - gave up in Season 2
LDS - watched it once, never again.
PIC - hate watched Season 1 and 2.
Whilst I enjoyed Picard Season 3 and Prodigy, I doubt that I'll ever bother rewatching it.
The other issue is that other Sci-Fi shows have left Star Trek in the dust. For All Mankind, Pluribus, Foundation, Murderbot, Severance, Andor, The Expanse- all these shows are significantly better than anything Star Trek has produced since Enterprise ended IMHO. And Enterprise was eclipsed by BSG at the time.
For All Mankind is my favourite, it'd have been so great if this had been a prequel show for Star Trek.

TOS? Ever since a young child. On first viewing, "Return to Tomorrow" is the first one I remember distinctly -- for the cave, Sargon's sphere, and when McCoy was roasted like a marshmallow by Thalassa was definitely a striking image. As a kid, the more adult elements and themes wouldn't be recognized but that's where the fun begins. But over the eons I've rewatched TOS more times than I can remember, yet most episodes remain fresh and new.
TAS... I don't recall it from original run. May not have seen it in reruns. I did get the DVD set and finally watched; they were trying hard to make this feel as adult as TOS as well as using animation's strengths to sell truly otherworldly conditions and characters that TOS couldn't begin to do. Some episodes are better than others, but I've rewatched this series... twice?
The Kirk movies of 1979-1991... multiple times for each new home video release, though I've rewatched the 4K versions the least - save for II, VI, and TMP (the extended tv cut, remastered in its original widescreen glory.) I'm due to rewatch III and V again. Saw VI three times in the theater.
TNG: I remember more the reruns, before the DVDs came out, as I was always eager to tune in during seasons 1-4. Even on initial viewing, season 5 had a changed tone and format and, yeah, shows tend to do that over time to remain fresh for as long as possible. It was also amusing to see a teaser that really looked great but then the episode was more boring than TMP ever could be, with incidental music to match. But imperfect or warty or not, 1-4 - especially 3 and 4 - are just amazing. With Blu-ray, I've rewatched handfuls of every season a few times, most of which between seasons 2 and 4.
TNG films: Rewatched GEN a handful of times. INS only for each new home video release, though I liked it more in 1998. NEM was just drek, rewatched only to ensure the shiny new disc wasn't defective. But have watched NEM one added time. They're pretty much glorified cast reunion parties with stories approaching nothing near the level of intrigue lore building Kirk's had done, and Kirk's had no template (much less a fully fleshed-out Starfleet, making the wiggle room and more daring plotting easier). But this is where I really enjoy PIC season 3 as it retroactively gives merit and plot meat to those films (spoiler alert: I'm unorthodox and in the smaller camp on this but the TNG films either stunk, had a modicum of potential it still stumbled on, or wallowed in inane fanwankery.)
DS9: Off and on, but became an avid viewer in seasons 4-6. When the home video re-release came out I bought it and rewatched. Definitely a worthy series. .
VOY: Off and on, but became an avid viewer for seasons 4-5 thanks to the show finding something unique to make its own and told well (Seven/Janeway's double act exploring humanity via the Borg as prior catalyst instead of more robot shtick), tuning in sporadically for the rest if the teaser looked good. When the home video re-release came out I bought it and rewatched. Definitely a worthy series at times, but even for this spinoff the treknobabble and plotting devices were often too rubberstamped, by-the-numbers.
ENT: Off-putting and jokes like "reed alert" were pandering. Season 4 and a fresh production team definitely had the show aiming on the right track again and a season 5 could have been stellar. Pretty much watched an episode or few at the time and was done. The franchise had ran its course and prequels are never a good sign, or rather no prequel yet has really done anything to make the show it's ostensibly setting itself to prop up come across that well. A few tidbits on technologies to bridge the gap between the centuries prior to Kirk... meh. The whole thing feels more like a prequel to TNG and not Trek as a whole.
LD: Loving homage to Trek, which had a field day being self-aware parody that, along with including Rick and Morty, Futurama, and related cartoon humor, also had a heart, took itself seriously at times too, and introduced ideas like "second contact" (which was pretty cool), etc. Quite a balancing act and an impressive one IMHO. Rewatched a few times, esp seasons 1-3.
DSC: Handful of episodes at the time. The Harry Mudd one from season 1 had potential and reboots don't often do much... for me, YMMV of course
Short Treks were too often crass and a pass, though a couple (the Very Short Treks, for the 50th anniversary?) had this odd sense of humor that I could roll with. And the 50th took itself seriously in other venues so why not have a little fun too. I rewatched 3 of the Very Short ones and, yeah, 2 of those were perfect and the third grew on me since last time.
The others? Meh. Kept mostly to clips and full-length premieres just to see and hope, and none of it felt like anything beyond "style and gimmicks over substance".
