Franz Joseph gave the TOS Enterprise saucer 11 decks, which seems about right.
Franz Joseph didn't make that decision. He was following the description of the ship in The Making of Star Trek pretty closely. The deck count (and the features found on each deck) are all described therein. It was his primary source.
Adam was being considerate. Apparently his farts really smell so he stepped outside (the ship) for a moment.In regards to the curved buttressed wall of the briefing room set. I just recently caught "Way to Eden".
During Spock's duet in the briefing/rec room we see Adam slip out through a passage past the left end of that curved wall. Through one of those grill work partitions.
The curved wall and supporting buttresses suggest an external hull section. But Adam's exit would have him ending up outside the ship.
But what I find befuddling is how long it took Kirk to recognize that the minds of the landing party were being read to manufacture people and objects. There is absolutely no credible way someone like Finnegan would just happen to be on a remote planet, looking like he did 15 years ago. If he's an illusion, then some intelligence is on the planet manipulating his mind.
After Kirk is rescued near the end of The Tholian Web, there is a flyby shot of the Enterprise that shows the underside of the Engineering section. There is a huge gold circle with red trim. I realize that it is a remastered version, but I still can't figure out what that circle is. Maybe a Federation symbol?![]()

If you get blueprints, say from Jackill or Thomas Models (RIP), they usually have callouts indicating what they think those marking are. Usually service panels. A popular suggestion for the yellow one is a hatch for the antimatter container. For example:
