I think when Pike used the number 800 he may have been referring to the number of surviving crew members and the children who were born to them in the intervening 20 something years. Hence, George Sr. did save 800 lives, sort of.
Most advanced and largest are not necessarily synonymous. (Hello, Defiant-class!) Besides, there's an argument to be made that by getting by with half the crew in (what I'm assuming is) a similarly-sized hull, the Connies were more advanced.Of course the biggest thing I don't like about the USS Kelvin is the fact that it existed before the Nero's time-travel escapade, and yet despite this it still was much larger than the Constitution-class (I don't know if it's size was specified, but it looked bigger, especially when you look at the shuttlebay and had a crew of eight hundred) which was a more advanced design (wasn't even built yet) which was supposed to have been the largest ship of the era at 289 meters.

I preferred to think the Kelvin was going to or from some sort of colony support or rescue mission, and 500-odd of those people were passengers or refugees or whatever.
The Kelvin is so badass, even Robau has to come down in a turbolift to go to the upper hull!
