Though anyone is free to dislike a character for whatever reason, I don't think these statements about McCoy are fair:
As for interfering with alien cultures, this is a broader problem in TOS, specially when it comes to Kirk.
He's only opposed to technology that's evidently "evil", easy to go wrong or dehumanizing. Like the M5. He's not against useful technologies, like the knowledge helmet in Spock's Brain. If McCoy was alive in our century, he'd probably rant about ChatGpt, but I doubt he'd be against, say, medical implants that restore mobility or improve life quality for injured patients.2. He regularly expresses skepticism or outright hostility toward advanced technology and artificial intelligence—odd for someone practicing medicine in the 23rd century. This could hinder medical innovation or adaptation.
McCoy occasionally makes decisions that would violate contemporary medical ethics—such as treating patients without consent, experimenting with untested treatments, or interfering in alien cultures.

When he challenges Kirk, he's doing so as his friend. Possibly as his only friend onboard, which Kirk appreciates. On those ocassions Kirk is "Jim" for him, not "the Captain".4. He frequently challenges Captain Kirk in emotionally charged ways, sometimes undermining the chain of command. While his moral compass is admirable, this behavior can be disruptive during critical missions.
It's weird how McCoy is being singled out as the racist, when plenty other characters make statements that could be seen as racist from a modern viewpoint. Kirk, Scotty, Uhura... almost everyone has made fun of Spock's Vulcan attitudes at one point or another. And Spock frequently makes disparaging comments about humanity as a whole, and yet he's seen as the bullied victim? At least McCoy's jabs are more against Spock's personal (and often insincere) attitudes, and not against Vulcans in general. He criticizes Spock because he knows his unemotional facade is fake, and is doing harm to him on the long run. And he's the first to defend Spock when a character is truly insulting or humilliating him, as in "The Omega Glory" or "Plato's Stepchildren".5.His Racism towards Vulcans has always rubbed me the wrong way. McCoy frequently makes sarcastic or demeaning remarks about Spock’s Vulcan heritage. This could be seen as unprofessional and culturally insensitive, even if it's supposed to be friendly banter.
