As for Aliens I would want to see more of? The Tzenkethi and the Tholians.

Medusans. By the 24th C, they'd be Federation members and probably would have a better means of interacting with the largely humanoid aliens of the galaxy - such as a human-looking "body suit" that would also allow for speech communication.
