I noticed a while back that Maxim Baldry isn't included in the cast list for Season 3, do we know why? His storyline seemed pretty open still at the end of Season 2, and with him being such an important person in Middle Earth history, I find it hard to believe they're not going to be dealing him anymore on the show. Could one of the new cast members be a recast version of him maybe?
Probably recast. IIRC, the initial announcement of season 3 said there'd be a substantial time-skip, so they probably wanted to shift to an older actor.
 
Yeah, that could be it, there are a whole bunch of new cast members who's roles haven't been announced yet.

As much as I like Wood's Frodo, I don't think he's quite as iconic as McKellan's Gandalf, Astin's Sam, Serkis' Gollum, Blanchett's Galadriel, or even Bean's Boromir (his performance helped me truly appreciate the character). I don't blame him for being protective of the character, but I wouldn't mind seeing someone else playing him at some point.

We have our first big casting for The Hunt for Gollum: Per Deadline, Kate Winslett is joining the cast in an undisclosed role and she'll be uprooting her family to New Zealand to shoot between May and October. Apparently both Andy Serkis and Peter Jackson spent much of last year to convince her to appear in the film.

The big question is who the hell is she playing?

I didn't know Mortensen had declined to return. That's unfortunate. The Hunt for Gollum is set before and during The Fellowship of the Ring but now we won't have the continuity of that same actor in the role.
I'm not too disappointed about that news. This is a prequel and Viggo has aged quite a bit since the trilogy. I much rather have a proper recasting then rubbish de-aging. Maybe Viggo can appear in some small role to set up the story, although I suspect that's Elijah Wood's role.
