Lets try to exclude the original star trek and enterprise though... the original series was before my time and enterprise was just terrible.
 
Mmh, the quotes that immediately came to my mind when I read the thread title are from TOS or ENT, funnily enough.

Picard...."The line must be drawn here, this far, no farther.....and I WILL MAKE THEM PAY FOR WHAT THEY'VE DONE!!"...First Contact...3. Spock..."The needs of the many outweigh the needs of the few..." Wrath of Khan. 4. "to be the man...woooo....you gotta beat the man"...no wait....that's Ric Flair. 5. TNG...."Shut up Wesley!"...everyone in the world.

That would have been my choice as well. I always liked this one by Spock, too:
