Well, I'm of the Richard Matheson school of thought that the best way to handle fantasy is with as much realism as possible. You include only what fanciful elements you need for the story and keep everything around them as grounded and believable as you can -- and treat the fanciful elements in a grounded, matter-of-fact way too so that they feel real for the duration of the story. I'd be very interested to see Superman handled within a naturalistic context, sort of an urban-fantasy approach.
