Hell, in TOS they often stuck Starfleet shirts with full rank braids on guests like Captain John Christopher from the 20th century. If someone who isn't even in Starfleet or the 23rd century to begin with gets a shirt with a braid they never, ever earned then I suppose a full fledged and trained officer has some leeway in the wardrobe department.

Tuvok stayed Yellow... oh and he was 2nd officer.

Actually, yes, he should have changed uniforms.

When Jellico had Data replace Riker, I'm pretty sure Data ended up in red.

Believe the same thing happened when Riker had that unwanted holodeck visit to the future and found he was Captain and Data was his First Officer. Data ended up in red.

Tuvok should have been in red.

Janeway had a background as Science Officer on another ship, and ended up in red when she got Voyager.

Ah, but you're ignoring ALL OF THE ORIGINAL SERIES when spock was both the Science and First Officer and wore blue.

I don't think there really IS a legitimate gripe. And even if there were, it's TREK and Starfleet. With all the shirt color inconsistencies in the two original pilots you can come up with an in-universe explanation or two.
