Kinda looks like it's only the saucer section and the top part of the neck.
Yeah it definitely looks like the ship might have a secondary hull from which the saucer separates for planetary landings. The Athena has been stated to be 'huge' so it is possible that this is just one part of the ship. It would make sense that a ship carrying cadets would have a saucer separation feature in the even the ship gets into a battle.
It exists as a building most of the time.

I can’t help but wonder if Giamatti is half Fajo, half Arturis…someone who had much—and lost it all.

Now I've seen the side view, I dislike it a bit less.
This seems to be the main ship, in the shape of the logo...?
I'm still not taken by these 32nd century ships, but it helps that the show isn't always on Earth.

I marked for you parts that I think I recognized:Orange are weapons platforms.
Blue is main deflector area.
Green is hangar bay.
Yellow is bridge and command center.
Pink are warp nacelle coils (which are romulan/klingon parts that extend on side of external rim of detached saucer.)
Purple are impulse engine with impulse crystal.
For me this ship looks old, like very old at least 700-800 years old (notice shape of TOS/Picard S3 rim on inner saucer), that was refited and introduced to service for Academy.
It also makes sense since pre-burn ships that were decomissioned and their warp cores were disabled are now re-introduced within structure of Starfleet and updated in Archer Spacedock.
I need more pics of the Athena to wrap my brain around it lol
It's not using the "White Hull Armor" plating that the rest of the 32nd Century vessels are using.
It looks closer to USS Discovery coloring where it looks like raw un-painted steel.

I think it's fair to say they're just spamming ships from their Eaglemoss archive and Disco/SNW/Picard and looking too closely at ships 900 years out of time will just drive us bonkers.

Heh... I'm perhaps the outlier, in that I don't necessarily have an issue with a basic ship frame seeing a century or more of service, if it's useful enough to be regularly updated. There are some real life precedents, and with fiction it tends to depend in large part on the setting.
The Exodus Fleet used by the Star League Defense Forces in Battletech had a lot of warships that were decades old, if not perhaps a century or more, and some of those vessels were still in service several centuries later with the SLDF's descendants, the Clans. This is partly due to Clan military doctrine evolving to put more influence on ground units than fleet units, so many stronger Clans retained a handful of warships more from power projection than a combined arms role. Only a few post-Exodus designs were developed, the cost of maintaining naval assets was another factor. BT naval technology is, relatively speaking, less advanced than their Trek counterparts.
That being said, however, I do think there's a logical upper limit and 900 years would be quite the stretch.

I spotted the M'Chla refit from STO (24th Century variant of the DSC BoP) which was was guessed to be there from a previous video, but there's a clear side view here. Clear being subjective, but the silhouette is recognizable.

I didn't remember this when I wrote the other reply, but I was recently looking at my FASA Trek library and I like their explanation for the DY-100 model being reused in "The Ultimate Computer." It's a more modern, automated variant named the Zeus that was designed by a fan of historical ships. 
The first edition of Trader Captains and Merchant Princes has a detailed stat block and cutaway but no class description, which was added in the second edition of TC.
