Coulson did die again, but they brought him back as an android with Coulson's memories and personality. I think that version survived the finale.
I used to joke that how Coulson kept dying and being brought back was the most comics accurate aspect of the MCU.
Rather, Coulson and May said their goodbyes to the team and were left behind on Tahiti (the real one this time) to live out Coulson's final days. I believe the producers said in interviews that it ended just before the Snap.
I actually thought that Season 5 would have been a great way to end the series, and then team members could make appearances in movie projects. I agree that it was funny to bring back Coulson twice (plus a mulitversal Coulson? maybe?). Like I say I really don't remember Season 6 very well.

I'm only two weeks (6 episodes) into my Daredevil/Kingpin Character Marathon, but it's actually quite astounding to be reminded just how much those episodes 'seeded' in terms of future narrative for not only Matt's story, but the rest of the The Defenders Saga (Karen's journalistic tenacity and dark past, The Hand, Claire's 'saving people complex' that eventually leads to her becoming the 'glue' linking all four Defenders together, Matt and Karen's eventual relationship, the introduction of Marci, Fisk and Matt being 'dark mirrors' of one another, Ben Urich).
Although I really enjoyed watching it, I felt that I would have enjoyed Born Again more if I hadn't.
