Coulson did die again, but they brought him back as an android with Coulson's memories and personality. I think that version survived the finale.
I used to joke that how Coulson kept dying and being brought back was the most comics accurate aspect of the MCU.

I actually thought that Season 5 would have been a great way to end the series, and then team members could make appearances in movie projects. I agree that it was funny to bring back Coulson twice (plus a mulitversal Coulson? maybe?). Like I say I really don't remember Season 6 very well.

Rather, Coulson and May said their goodbyes to the team and were left behind on Tahiti (the real one this time) to live out Coulson's final days. I believe the producers said in interviews that it ended just before the Snap.

That's the scene I remember. It was quite lovely. The producers can say it ended just before the Snap but the onscreen dialogue contradicts that unless Melinda and Phil shipped off to Tahiti immediately after the final fight scene.

Season 5 was meant to be the final season, which is why they ended it that way. But then the network decided to pick it up again, and they had to figure out what to do next.

I dunno... it depends on how much ambiguity there is in the timing of events in Infinity War. I don't think it fits perfectly, since, again, I don't think the producers were in direct communication with the filmmakers, so they had to make some guesses based on what they did know. But sometimes you have to squint a bit to reconcile different parts of a continuity. It's a lot easier than reconciling Marvel stories published in the 1960s with the modern timeline.
