Actually, it prevented David, Spock, and Saavik from getting blown up.
To be fair, I doubt the Grissom could've put up any real fight with anyone else in the captain's chair.
Especially considering that the Klingon who destroyed it was so dumb, he didn't understand what "target engine only" meant.
He probably did target the engines, just used a little too much juice. Ideally, ships shouldn't explode with one shot.
