if the Borg came in the 23rd century and made a Locutus out of Kirk, what Spock+the gang 'd've done?

Perhaps Kirk & pals could have just given the Borg a tribble or two, problem solved.
The rate the tribbles are procreating the entire collective would have their hads full trying to assimilate all the tribbles and the Borg would not be a threat anymore.
 
In original TOS canon, tribbles are actually not a big problem as long as you don't feed them. Later on, they're like the Shmoo in Lil' Abner, reproducing out of control despite consuming nothing.
 
Given that Worf manages to kill one with a mek'leth and Data snapped another's neck suggests that the Borg don't really have a defense against simple impact weapons like clubs, knives, swords, bullets, or android hands. They only adapt to directed energy weapons.

If the Borg were capable of adapting to direct physical violence, they would have done so round about when they assimilated Species #2. Assuming they themselves were #1.

I thought they were eating out of the Cabot's food stores in that episode?

Don't think it was actively stated. And given the sheer volume of tribbles that was filling the ship, I don't think the Cabot had enough food for that.
 
Kirk would have talked them into a Landru / Nomad breakdown. Whole thing over in 45 min.
 
Yeah. Spock would use Kirk's favorite method and trope it up with "nag the computer to death", despite losing emotional control over proving McCoy right by having to destroy the computer instead of the usual allusion of making love with it (e.g. "The Ultimate Computer" where "the right computer finally came along".) I'd watch such an episode for the Spock/McCoy banter alone. and as Spock always manages to get in the last word, hehe...

They don't seem to assimilate a lot of less advanced species. So even if they encountered it, it's possible they haven't had to adapt in such a way in centuries and it was simply relegated to their larger-but-slower-archive and just would have needed a bit more time to retrieve it.
