So about how many Jedi were around during the OT?

So far as we know:
Yoda
Obi-Wan
Luke
Ahsoka

The ones that have survived Order 66, according to various sources:
Any who became Inqisitors
Kanan/Caleb (KIA)
Oppo Rancisis (MIA)
Quinlan Vos (MIA)
Eeth Koth (killed by Vader)
Cere Junda (?)
Cal Kestis (?)
Luminara Unduli (executed)
Jocasta Nu (Killed by Vader)
Mace Windu
Randos that we just see once or twice in the comics as they get hunted down

He fell off a window on Coruscant. Why'd that kill him? He's master fucking Windu, not Bell Zettifar. Is that what made him so cross at Anakin, he was jealous proto-Vader and his master did it for fun for the entirety of the Attack of the Clones, while he himself just couldn't do it? And even Anakin's padawan did it from the three-point line at top of the atmosphere, no hesitation, instant release. OK, maaaybe he was a little stunned by lightning, but Maul survived being cut in half, Palpatine survived it exploding, Chewbacca survived falling in exploding ship struck by a Palpatine and Leia helped Luke survive falling into the pressure hole of a gas giant without training. If Windu couldn't save himself a force-sensitive passerby surely could pick him up, no?

I'd add Barris to the list as "?", since it's a bit of an open question what happened to her. I mean if Tarkin just had her executed you'd think they've have mentioned it by now, and likewise if she became an Inquisitor they've already had a perfect chance ot tell that story and opted not to. So I suspect she's in the wind...or at least was early on.

Didn't need to. He was already dead from "unlimited power" to the face before Palps sent his corpse flying. At the very least he was unconscious since he'd stopped screaming, and a 100+ story drop while asleep is guaranteed death by street pizza, even for a Jedi Master.

Ahsoka had chosen not to rejoin the Jedi Order, which is why Yoda could say that Luke would be the last Jedi. As far as I can tell, nobody has cheated yet by claiming that Yoda didn’t know. Therefore, the answer seems to be “Obi-Wan and Yoda until they died, then Luke.”

Ezra Bridger was made a Padawan. I'd list him as MIA.

Erza is more like Luke and didn't so much survive Order 66, but didn't get discovered until over a decade afterwards.

Though MIA is accurate to his situation during the events of the OT.

OTOH, 100+ stories is plenty of time to regain consciousness. And not going splat after that is what even upstarts like Anakin and Ashoka have mastered in, say, "Landing at Point Rain".

It really is a case of painting oneself in a corner with sticky tar. Chopped-off hands (or any other body parts up to 50% of total)? Terminal fall? Fried by Force lightning? All have been survivable individually in specific adventures. And even at the very height of his power, Palpatine fails to finish off Ben Solo by a combination of two of those methods. Add to this the bonus roll Windu gets from being badass (much like Boba Fett got), and it's one of the more plausible resurrections of the franchise.

I'm not saying it's impossible to tell a story that retcons him having survived, but as it stands right now the intent of that scene was obviously: he's motherf*ck'n deader than tanktops.

It would be nice if that happened. Just stay dead.
