I don't understand any more. Star Trek was about the future and human struggle and capability. And yet it comes down to colored jerseys and simple colorful sets...the future, everyone.

That was Axanar's strongest argument (at the time) that it visually called back to TOS in stylings as though this were a documentary that needed strict adherence.Nope. I think there is middle ground. I rarely see it articulated so I appreciate your write up. I disagree strongly but that's OK too.Have you seen Madkoifish' version of the Discovery? I think that's a great start to a modern looking yet pre-TOS version of the Planet of the Titans concept art ship; I'd even say it's a bit too faithful for my tastes but I still like it. As for interiors, a gray base to the walls (even if it's glossy and a different shade of gray), bright lighting, and similar primary color accents would be a good start and then you add in the modern holographic controls and communication system, gakh buffet, viewscreen panoramic space window, etc. I don't want static maps/pictures on screens and jelly belly controls and frankly most of the people I've talked with who also dislike the show don't either. It's just easy to pretend that there is no middle ground between "ZOMG! you can't handle any change!" and "Burn it all down!" when there's plenty of wiggle room. I suspect that the upcoming Pike show will (hopefully) be a lot better in that regard as well as thematically (the other half of my problem with nuTrek).
If they wanted to completely tonally and visually change almost anything, they should have started in the 29th and a half century (or whenever they went to) in the first place.

And, no, I have seen the Discovery you were discussing. Nor do I find it necessary. Discovery is an ugly ship that is best left behind but won't happen, sadly.
I prefer nuTrek to most of TNG-onward so that is my take on it. And, largely, when I see comments against nuTrek they are not articulate like you. It's just "It doesn't look right!" and then fan films complete the circuit by doing the 60s style interiors and they get mad praise for how they look. So, it's easy to think it is only about the looks.

Again, it's a bit too faithful to TOS for my tastes but I still really like a modern looking but authentic to both the Titans design and TOS asthetics version.

I too praise those fan films for what they did in that they were as close to 100% faithful to TOS as that was what they intended. Neither Continues nor New Voyages (at least from the interviews that I watched) intended for their fan films to be a modern version of TOS but specifically a loving homage to it. They weren't trying to change it and they succeeded in that goal (both asthetically and thematically) in my opinion. Would I want that in an actual new show from the IP holder? Absolutely not. Same thing with Prelude to Axanar. I liked the war setting/theme in Axanar (in part because my introduction to tabletop gaming was specifically with the FASA game from which it was derived) for a fan film as well (even if it was to be a feature length one in the original "plan")... but I'd not want that in a 2016 era ongoing show like how Discovery started (DS9 is my favorite but didn't start on that war footing). I also have different expectations depending on the budget as well. As for Discovery's sets, I think simply painting them base grey and putting in TOS accents along with proper lighting (seriously, that was more like lighting from Das Boot while they're being depth charged than trek!) that wasn't a Space OSHA hazard would probably have been enough for me personally in that regard... but they didn't bother doing anything on that bridge other than a few beeps and boops from what I remember in Season 1. At least in season 2 (didn't watch the third) they brightened it up significantly but the color palette still bothers me. YMMV.
TL;DR: It depends. What's great for a fan film doesn't necessarily translate over to a proper film or series (whether reboot or sequel).
I think you might be on to something with the painting. But, honestly the lighting doesn't bother me. Star Trek has always struggled with OHSA hazards so I don't really think in those terms. It simply doesn't register with me. Discovery's bridge simply was too big for what I would reasonably want in a starship bridge. But, as I have stated, Discovery as a starship design is on the lower end of appeal for me.
I don't really mind war stories. In fact, I prefer them in science fiction to a certain degree. Ultimately, though, the design language doesn't rate highly to me in terms of how a production is judged. I prefer characters over lighting in terms of importance. Mileage definitely varies.
