An extra nacelle will extend cruise speed/time and provide an extra nacelle in case of battle damage, something should be there as its a lot of wasted space even if its just an extra shuttle-bay or docks for a couple of runabouts.
The Galaxy class could be a solid design platform and adding value of some kind between the nacelles is a good start.

I always thought the Galaxy-X was more or less a fanboy/childish OMG SUPER GALAXY WITH THE ULTRA PHASER! design.
It was like a cheap, stupid way of highlighting just how advanced tech had gotten in the AGT timeline. The Enterprise has a ultra death phaser, can cloak and goes to Warp 13 and defeats two Klingon attack cruisers with ease where the old Enterprise was seen as a 1:1 match for a VorCha class.
Not if its integrated into the engineering hull like the Shuttlebay on the Discovery.At that point you would just have a galaxy with the payload pod of a Nebula
Frankly, that is stupid approach to fictional tech. It can look good and function well, because how it functions is completely made up. If you want more engine power you can just say the ship has upgraded warp coils instead of adding a hideous third engine. And the 'wasted space' between the engines may not be wasted, as it might be critical to warp field dynamics or whatever.I prioritise function over form.
