I have a decent recipe that I compiled from a couple I’ve found online.I have never had enchiladas, but i do have a food bucket list to add them to.
For the filling you just simmer shredded chicken, taco seasoning, onions, green chilies, jalapeños, scallions and a little water. Then I heat up sour cream and cream of chicken soup (with some chili powder and cayenne pepper) for the base. You can add hot sauce too. It takes about a half hour to get that together. You can even throw all of it in the crock pot, it cuts out a lot of the work.
After putting all that in tortillas, you can throw all kinds of stuff on top with the cheese and enchilada sauce. Olives, jalapeños, cilantro, I even put roasted corn on top one time. Then bake for 20 minutes at 350
