Only spoilers through the first episode, although if the question is answered in a later episode, feel free to post the explanation in spoiler tags.

There's a lot of mentioning about how Michael Burnham's parents were killed in a Klingon attack. There's also talk about the last contact with the Klingons was 100 years ago. Did I miss something? Is this an inconsistency?

It's not quite as explicit as that - it's caveated with an 'almost nobody has seen them', 'virtually silent' etc. There have been exceptions, and Burnham's childhood attack is one.

They said "nobody's seen a Klingon in a hundred years," so I figure there were ship-to-ship battles and attacks but no communication or direct meetings, similar to the Earth-Romulan War.

Which fits pretty nicely with what we've done in the post-Enterprise novels, where the Klingons have turned inward to deal with internal strife in the wake of the Augment Virus. Although that would be 91 years before DSC rather than 100, but that's close enough for rounding.

The show mentioned Donatu V?

It did indeed, in the second episode. There's also comments from multiple people that whilst there has been contact with the Klingons, it has been minimal. Even the initial line about no contact with them for 100 years is prefaced with "hardly anyone has seen..." or words to that effect.
