EDIT: JULY 13, 2016
All I was suggesting was a third timeline, separate from the Original Timeline and the Kelvin Timeline, set in the 2270s, with the TOS characters.
They'd use TOS as kind of a vague reference as to where this version of the crew has been, but wouldn't be bound to anything established in TOS, nor the movies, TNG, ect.
But please note that I no longer support this idea. It was just something I threw out there because I was bored at work one day.

I have always wanted to see that hypothetical "Phase II" series with the original crew. I think it would be a great period in which to tell new stories with the original characters as they're still young, but at the same time have the experience of the first 5-year mission under their belt.
But I also understand the 'real world' struggles of attempting an Interquel such as what I'm suggesting. Is Kirk a Captain or Admiral? What uniforms do they wear? Do you have a retro bridge? Will fans accept different actors in the Prime Universe versions of these iconic characters? Not to mention you'd have to have a writing team pretty knowledgeable about the vast history of Trek.
I think you can do this 'Phase II' series in an alternate timeline. Not the Mirror Universe, not the Nu Trek universe, but a separate one altogether. One of my favorite episodes of all Trek is the TNG episode "Parallels". I assume we've all seen it, but if you haven't, it establishes that there are literally an infinite number of alternate realities that exist in the Star Trek universe.
Have these characters be experienced. Use the Original Series as kind of a vague history to draw on - I think it's very reasonable to assume that this crew had a "Balance of Terror" or an "The City on the Edge of Forever". But with it being an alternate universe, you can allow these iconic characters to trek on with a clean slate.
I think audiences can handle two different versions of these characters, as the movies will be in a different universe. It would give us all an opportunity to see these iconic characters in new stories, but without the lens flares and explosions and the Beastie Boys playing in the background. (I enjoy the Nu Trek films, but it is what it is.)
I will now sit back and let you all pick apart this idea as I'm sure it's ridiculous. I just had to get it out there so I can move on with my life.
