Has Trek ever done anything holiday-related?

No reason to think human religion was done away with, it hasn't been eliminated on any other planet. Just the average ship would have so many different religions, holidays are probably privately observed by members of the religion, and any necessary days off are respected when there is no immediate emergency. But not officially recognized across the whole ship.
 
Data plays Scrooge. Yah probably more Dickens surviving there than any Christmas memory.

Bashir has been to a New Year's Eve party ("Explorers").


No themes there, just mentions, especially number 2.
