I'm not against adding depth or expanding on their culture or making them look more realistic, but this just seems to be a tad bit too far.

That line will vary for many. For me, we know too little about the Gorn for me to call it too far.

Arena didn't establish enough about the Gorn one way or the other to make even the slightest bit of difference about what gets established about them later. The specifics of the Trill species have been altered far, far more from their first appearance than the Gorn have.
