If you move the cursor to the side of the structure, you'll see a line with an arrow.
To stretch, just move the mouse around till you see this:
Move the mouse to as central on the wall you want to stretch as you can and you'll get this. At the smallest size it can be a bit of a trick to get it to pop up. Once the structure is bigger, it's easier.
2. Move the mouse higher and you'll get this. This will raise the height of the structure up or down.
3. This will raise the roof up or down. Down flattens it like a castle wall with merlons.
4. Right clicking on the structure brings up this. The cross will move the entire structure, the spaced out arrows on each side of the walls will stretch in that direction. The top arrow stretches up, the top arrows pointing left and right will stretch outwards. The two dots on the right will lift the structure up or down.
This game is very...I dunno what the right word is...contextual? But a lot depends on where the mouse is and the game does the rest. Like if you add a window, then add another window in the same spot, you can make a new kind of larger window. Do it again and you can make an even larger, different window. Only 3 times per window. Click on the window (regardless of size) and it'll cycle through things like shutters, flower beds, laundry lines (laundry lines that can connect with other laundry lines). The fun is experimenting.
Here's a castle / town I'm working on, though I'm not sure how I want to work on the the castle side yet.
My skills are pretty mid, so none of what you see here was difficult, just time consuming. Photo mode as a first person view where you can walk around your glades. Love that feature and it was a huge selling point.
This might help a little better
