I remember the Carrie jump moment very well. It's still creepy.

I tend not to get too jumpy with film and TV shows, but occasionally they get me. The Ving Rhames version of Dawn of the Dead had a great jump moment when we see a rather messy looking zombie suddenly appear up against a window.

The 1991 mystery movie Dead Again starring Emma Thompson and Kenneth Branagh had a really bad one. The soundtrack goes utterly silent and then Thompson screams something like "SOMEBODY HELP ME!" at the top of her lungs. I happened to be watching this late at night and I thought it would wake the whole house up!

Doctor Who has actually provided TV's only jump moments for me in recent memory. A couple of appearances of the Weeping Angels in Blink did it to me, and there is also a great jump moment in the just-broadcast Waters of Mars that I won't spoil since it hasn't aired in the US yet.

Totally. That episode scared me witless. I always thought statues and old paintings were creepy.
 
If you haven't watched Exorcist III then you need to. It has a scene that's the perfect example of what you're talking about. I saw it in the theater twice way back when and both times audience members screamed with surprise and I actually saw one person jump out of their seat.

I know EXACTLY what you're talking about. (hospital, right?) I love that movie almost entirely because of that scene (along with George C Scott talking about the carp... that cracks me up). The Jesus statue opening it's eyes usually makes me take a quick breath as well.

Yep, the hospital scene. It still gets a rise out of me whenever I watch it, even though I know what's coming.

George C. Scott was great in that film. He and Ed Flanders (Father Dyer) had great chemistry even though they were only in a few scenes together.
