I'd more consider that a "world under construction" inconsistency, and I'm usually tolerant of them. A little like how no one knew who Section 31 was before "Inquisition", but it was regularly mentioned afterward in the 22nd, 23rd, and 24th centuries alike.
I'm in no way tolerant of Discovery's outing of Section 31. The 22nd century mention was just through Reed, and the 24th was after Bashir spilled the beans to Sisko, but the official status they have in Discovery is absurd.
- The Dax Symbiont was about 300 years old compared to Worf's 30 in the final season, so it had 10x's the relative life experience that Worf does, including two+ centuries of contact with Klingons.He got into hissy fits when Ezra came on board where he wasnt fond of her because of Jadzia's memories and the Trill thing inside of Ezra.
He was pretty much a butthead about the whole time.

I don't think the ending with Ezri and Bashir getting together made any sense. It looks like more pity - poor Dr. Bashir hasn't gotten any since Leeta broke up with him, and isn't it about time he did?
Maybe joined Trill are rare enough that the symbionts are not widely known about. Unfortunately, we've gotten varied information about how many Trill can be joined, and how many are selected.
Yes that was totally covered in a specific DS9 episode, though I am not sure which one. It was an interesting wrinkle but also sort of perplexing in how a fact such as that would have gone totally undiscovered on Trill. In fact one would think the selection process was put in place by the Trill precisely because symbiotes can merge with just about anyone, best to ensure then that the best and brightest are selected to hopefully make best use of the experience and memories of past lives. It would make sense that a secret like that would persist for ages but certainly not in a society as advanced in medicine as the Trill surely were before membership in the Federation.Didn't it come out that basically all Trills are capable of joining with a symbiont, but that little fact is kept from the Trill public as it would cause an uproar from too many people wanting to be joined?

Julian didn't transplant Dax into Ezri. It was by an unnamed doctor aboard Ezri's old ship enroute to Trill.
