While a nice touch...I kind of have to wonder if it was simply because Kirk emerged from a magical space time magic carpet ribbon and S31 was like "cool"
Honestly? That was my take on it. One would assume that after the full debrief and learning about the Nexus, they knew of only one person to actually fully go into the Nexus, remain there for both (almost) 80 years but also just a few minutes and then come back. Soran and Guinan only flickered in between I believe.
So yeah, I can get why they'd be interested to see if anything interesting could be found be disecting his remains.
