Which episodes start the Dominion War?

Netflix in Japan has started showing all of DS9. When DS9 first appeared back in 1993, I (a rabid paleo-TOS fan) thought it wasn't worth watching (due to some story about being forced to go through an apparently dangerous puzzle by friendly aliens?) and stopped. I heard it got better, but I never got a chance to watch it regularly. But now, because it's become available on Netflix, I want to start watching episodes about the Dominion War. So, tell me, where should I start?

Thanks for any info you can provide.
I think if you want the context to go along with the actual war, you need to start with "The Jem'Hadar." For one, Alan Oppenheimer commanding the Galaxy Class Odyssey was pretty cool. What happened to the Odyssey set the tone for the whole thing. And the way it was presented you FELT it. And at the end (since you've watched this episode) when the (ex-captive) Vorta says, "you have no idea what's begun here." Then shoots the "deuces"...you know you're going to "enjoy" the build up that is to come.

And that starts with "The Search" Parts I & II. DS9 got weaponized, and now Sisko not only brought back a kick-ass ship -- he brought back more personality.

To me, this is where DS9 really started to take off. Its "Best of Both Worlds" moment(s). But whereas TNG peaked Season 3 EP. 1, except for a few episodes here and there like "The Inner Light" (that one is still hard for me to watch -- it literally hurts), DS9 kept (mostly) improving -- of course after season 1 -- which much like Voyager, there was nowhere to go but up.

And the acting in DS9 is unsurpassed in the history of Trek.

Wait, what was the question...?

Whenever the first Alpha quadrant ship entered the Gamma quadrant war was inevitable with the xenophobic Dominion, so some time in season 1.
