When did Geordi find time for a family?

I believe essentially that in All Good Things, Q was messing with Picard, not the others. So, assuming he had to create a believable future for Picard, he might have extracted the information from what Picard knew about Geordi. That, combined with Q's somewhat limited imagination when it comes to human relations may have resulted in this 'timeline' :)
If Q did create the timeline, he also grabbed things from the future, like the uniforms, as they keept appearing in other shows showing the future.

AGT doesn't actually specify that it was Leah Brahms who he married, though it's heavily implied.
True, not in so many words, and you're right, it is heavily implied - as heavy as a tablespoon of neutronium (bolding emphasis mine below):
PICARD: How is Leah?
LAFORGE: Just wonderful. Busy as ever. She's just been made director of the Daystrom Institute.
PICARD: What about the little ones, Brett, Alandra and er?
LAFORGE: Sidney.

PICARD: Sidney.
LAFORGE: Well, they're not so little any more. Brett is applying to Starfleet Academy next year.
PICARD: So what brings you here?
LAFORGE: Oh I just thought I'd stop by. Been thinking about the old days on the Enterprise. I was in the neighborhood.
PICARD: Geordi, you don't make the trip from Rigel Three to Earth just to drop by.
LAFORGE: No.
PICARD: So, you've heard?
LAFORGE: Leah's got a few friends at Starfleet Medical. Word gets around.
PICARD: I'm not an invalid. Irumodic Syndrome can take years to run its course.
LAFORGE: I know. Once I heard, well, I just wanted to stop by just the same.
PICARD: Well now that you're here, you can help me carry those tools. Well, my cooking may not be up to Leah's standards, but I can still make a decent cup of tea. Oh, I read your last novel. I thought that the protagonist a little too flamboyant, but for the rest I...
It is interesting to note that Sidney is Geordi's daughter's name in this timeline, and the one who went to Starfleet Academy and now piloting the Titan.

I'm sure we'll know about Geordi's relationship with Leah (or lack thereof) when he's re-introduced in an upcoming episode.

Oh yeah, I hope Geordi still has a side hustle as a novelist!

AGT is set a few years earlier, and implies Brett is the oldest. I wonder if he will get a name check too?

He may only have taken that job relatively recently. The background is that he worked on the Romulan evacuation fleet at Utopia Planitia, which works for me.

Is that canon, though? I know it was in the Countdown comic in 2009 (he designed the Jellyfish), but did has the current production referenced it?

Picard Countdown 2019 said that Geordi was overseeing the Romulan evacuation fleet. It has not been in onscreen canon. Keep in mind even this comic book was overriden by the tv show in some way--the comic states that Laris and Zhaban met as Tal Shiar agents, while the show later established they were promised to each other at birth.

I don't know. I think the time gap is pretty big to make it known that he and her must have lived enough life in that gap to establish a relationship that has grown and changed. Lots of it would be carried on performance as well. Good acting can show us that these two have been in love for a decade or decades and maybe toss in a line like "I never would have guessed all those years ago when you were yelling at me on the holodeck that we would one day have two wonderful girls and a lifetime of memories."
Again, from a people perspective it makes sense. From a story perspective it rubs very wrong.

There’s nothing in any of the films to suggest that Geordi wasn’t in a relationship the whole time, so I’d be pretty happy with a retcon that establishes that he was. Hopefully we’ll meet their mother too, or at the least find out who she was.
I would be perfectly fine with learning that Geordi's children were born sometime between Generations and Nemesis, even if it means tossing Una McCormack's The Last Best Hope out the window.

Aren't the books a parallel timeline now? No need to toss anything!

Yeah, I think the most probable scenario is that Geordi actually had a life outside of work during the 2370s and his kids were either on the way or already born by the time Nemesis took place.

The interconnected book continuity that was built in the novels published between the end of Deep Space Nine and the start of Picard is now considered to be an alternate timeline from the Prime Timeline, yes. Their timeline is now known as the First Splinter Timeline, and the backstory of Star Trek: Picard never happened in it. But The Last Best Hope is a Star Trek: Picard novel set in the Prime Timeline, not set in the First Splinter Timeline.

Ah fair enough, I didn't realise they were doing prime novels. It feels quite risky given the first Discovery book was quickly retconned by season 2. I guess it's back to the 90s where the novels are beta canon and liable to be contradicted at any time by the parent show.

Can't we have LeVar Burton's IRL wife just play his on-screen wife?

They already have his IRL daughter, Mica Burton, play his on-screen daughter.

And they gave him an extra daughter with Sydney LaForge as well.
