Enterprise XCV-330 (I think I am bound by honor to pick it)
retrofitted with DASH drive.
Ephraim as DASH drive navigator
Captain: Hernandez as captain. she's closer in time to that ship's era, and might know it better. Also she's hot.
Helm and Ops: Detmer and Owo. they work well together. Also they're hot.
Bridge officer: Burnham. She's going to find a way into the plot, anyway. Also hot.
Science Office: Tilly. reasons. Look I'm not going to explain them all.
XO: Saavik. She knows the regs, and is good at telling people that other people are dead.
Security Officer: Nhan. yum.
Ship's Counselor: Ezri Dax. I'm just basically going with a theme by this point. Don't judge me.
Tactical Officer: Kira. Served aboard Defiant in wartime. Good enough.
Coms: Hoshi. Uhura might be as good a comms officer, but the existance of Hoshi would throw more than one mirror universe empress off their tracks if they encountered her.
CMO: Crusher.
Engineering: Brahms
Chef: a Gorn. When someone demands to know when supper will be ready they can reply that they shall be merciful and qwiiikkk and then hang up on them.

My ideal starship and crew was made reality in 1966.
I like Riker as Captain, Kirk as first officer and Bashir as ship’s counsel to start. At tactical I like Curzon DAX and CMO, classical with McCoy. As for communications and Chief engineer, I’d go with Data and Geordi respectively. Helm? Nog just for a bit of versatility.

CO: Jadzia Dax. Ezri commanded the Aventine in the novels. However I always felt Jadzia showed great command potential when she was in charge of the Defiant during Sisko's secondment. Also I wish that instead of killing Jadzia off, Berman had agreed to Terry Farrell's request to become a recurring character by making her get a first officers position on a ship somewhere.

Oh you mean Uhura...... Ah. But that's modern Uhura not classic Uhura
The thought of this as my crew's ship did cross my mind, as did a Vor 'cha, a Galaxy, and a Defiant. But my ship and crew is more or less DS9 on a starship anyways with TNG's integrity and optimism added, so it seemed a bit redundant.
I also did think of adding Ishara to my crew, as well as Spock, M'Ress, Jake Sisko, K'Ehlyar, Dr. Leah Brahms and Barclay, and the Wildmans. It just felt like my main crew was getting way too crowded or they wouldn't fit in, so I stopped.
