Probably screw up subspace galaxywide.
I think OP is thinking to set off an Omega particle in Dominion controlled territory in Gamma and that'll stop the war. To me, that wouldn't do anything for the Dominion War. Even with the wormhole closed to Gamma the problem was all the Dominion assets in Alpha which has spent months building up shipyards and cloning facilities in Cardassian territory. So even if you space nuked Gamma you still have that immediate problem, not to mention you have all the innocent Dominion subjects that gets caught up in the mix, not just confined to one planet but randos stuck on ships in deep space who just have to wait to die. So I think the Feds would find it unpalatable, the Klingons think it not very honourable or good sport, but perhaps the Romulans or Cardies once might have had a go at it if depending on they knew about Omega, but it's probably too late in the war to get anything done, and even if the Alpha Dominion found out they'd more likely crack the shits and blow any chance of a peaceful ending. The war eventually ended by Odo's declaration to return to the Great Link to save it, so the Female Founder would probably just forget about order and start scorch earthing every planet in Alpha.

What if I blow up subspace in the Carddasian Space as well?
"Blowing up" usually refers to a chemical, fission, or fusion explosion. I'm not sure those would affect subspace at all. But subspace is a fictional concept. What do you think the writers of Star Trek would invent? What would you invent?
You definitely would end the war, but it also sets a precedent that those kinds of weapons are on the table and you might just start an arms race that could end badly for everyone.
As seen in Star Trek III, when the Klingons were worried about the Genesis device. While its ability to terraform planets was overstated, it's ability for annihilating life on those planets was quite real.
Well if you do, you'll have your hands full between Section 31, the 29th Century Time Cops and The Q.
But that was just one planet at a time. If destruction of life on one planet was needed, a single starship could probably accomplish that with phasers and photon torpedoes from orbit as seen in "The Die Is Cast", or an antimatter device as seen in "Obsession". I don't know what destroys a whole quadrant at once.

Exactly what I was thinking, but even moreso the Myriad Universe story "The Chimes at Midnight" which actually does seem to kick off a Genesis device arms race between the Feds and the Romulans.

I wonder what it would do to all those non-traditional interstellar transport methods, like transwarp beaming, spore drive, iconian gateways etc. It would probably obliterate subspace radio. You could make it like an end of the world apocalypse but on a galactic scale, Last Days of the Milky Way Galaxy or something. Everybody would be fine if they're stuck on Earth or Qon'os or something probably but all those people that rely on interstellar trade are up a creek.
