What Did You Have For Dinner Last Night?

It was buffet night at the JustKate household - that's what I call it when we have a variety of leftovers, one serving each. Lately I seem to have difficulty cooking just enough for one meal or enough for two meals, so we had all these single servings sitting in the refrigerator. Anyway, we had our choice of chili, chicken casserole, meatloaf, and spaghetti with meat sauce (which is apparently not the same as spag-bol - thanks for the explanation, Zion Ravescene). So my husband chose chili and I had a meatloaf sandwich. Both were delicious, if I do say so myself. Now I just have to figure out what to do with that spaghetti and the chicken casserole...

Last night I succumbed to a craving that I'd been fighting for several days. On a normal night I might grill a piece of chicken breast and maybe cook some rice to go with it. Hell, sometimes I'm impatient and I make some oatmeal. However, last night I was weak and gave in to temptation. I ordered a thin crust cheese pizza from Papa John's. I also ordered a cinnapie to go with it, for dessert. I didn't eat it all, of course (I do not think I could live with myself) so I will finish the leftovers tonight.

You might think I'm nuts, but nothing beats a steaming bowl of GRUEL!

Don't be gruel...to a heart that's true...

Roast pork loin marinated in this fantastic spicy tamarind sauce we got at a cool little spice shop we stumbled across in Olde San Juan recently. Oh, and veggie and rice.

Fish & Chips. Not from the guys I usually go to, and not as good. Mind you, there really isn't a top class chippy here. But it wasn't bad and it certainly hit the spot late last night as I was driving back late from work and feeling hungry.

I'll tell you what I had tonight: Two bowls of the most delicious clam chowder I have ever eaten. Straight from Legal Sea Foods. Can't beat it.

I ate there when I was in Boston last year, and I am forever grateful to Costco for selling the 'chowdah' so I can get it here! :techman:

Pot roast with pan-browned potatoes, gravy, and green beans. We bought the roast from a local farmer just today, and it was fabulous - so good that cooking it merely entailed not messing with it too much.

Salad and turkey. Then I got to experience it in reverse. Looks like I'm not over the stomach bug after all -- it's Saturday night in tonight. :(
