What canon would you like to have seen broken in Trek?

Yes, but it makes sense that they were also used in the same capacity in the Romulan War as well. I mean if the Romulans are an "Empire" then they should have slave races, and slave races can be used as soldiers for the Empire if they didn't want the enemy to see what they looked like.

Of course, if they had actually done that in ENT the canon-nutters would have been endlessly howling their guts out over how "TOS never explicitly said the Remans were used as soldiers! Horrific canon violation!".
 
You'd think the slaves would know what their captors looked like, though.

A Reman soldier captured by the Enterprise during the Earth-Romulan War: "Holy crap, Captain Archer, beware! There's a Romulan chick right behind you!"
 
Or maybe they'd all have been conditioned to not talk about the Romulans or have some kind of self-destruct in their uniforms (that they didn't know about) to kill them in case of capture.
 
Even if it seemed a little gimmicky in Balance of Terror, the idea that we fought an entire war with the Romulans without ever seeing them is totally badass. ENT made that scenario implausible only because they made everyone's technology too advanced.

I always pictured the Earth-Romulan War as having been carried out with nukes and primitive lasers. Neither side would have transporters, and communications between the beligerents would have been only by radio. In the vastness of unexplored space, maybe neither combatant would have ever been able to mass enough ships to conquer and invade each other's worlds. The majority of the war would have been waged in deep space and uninhabited systems by individual ships and small squadrons. Each side would primarily be trying to take out the other side's convoys and mining settlements and whatnot.

Or if you want to ramp up the drama, maybe the Romulans actually did manage to take a handful of our colony worlds, and they simply nuked the inhabitants from orbit.

Of course, Enterprise comes along and ruins that by making everything identical to Star Trek Voyager only a little more retro looking.
 
^Maybe they nuked Andor and Tellar. This would explain their apparent lack of prevalence in the Federation at large, despite being founding members.

Yeah, there's that.

Really, I don't see why there needs to be any ground combat in a space war. If you've lost command of your skies, you're already finished.

Unless you have land-to-space weaponry on planetary surfaces, and sufficient shielding/armor to protect from space bombardment that you HAVE to go down there to really take out the enemy before the rebuild their space forces using underground facilities.
