When was the NX-01 most likely refitted?

Now that you mention it, I can see President Archer taking the NX-01 out for a ceremonial cruise or two at public events. In which case the refit would be done both as a testing ground and as a publicity stunt.

The crazy part is he must've been an Anakin Skywalker level kid prodigy because separate episodes claim Henry Archer died when Jonathan was 12 yet gave Jonathan flight school advice when he was alive, meaning that Jonathan was attending flight school at 12...

Ah, I see what you’re saying now. Nothing on the show indicated that it was a different class or not, that’s true. It was only background material provided by Dave Blass (who is not infallible by the way, and doesn’t particularly like being corrected because he apparently has an easily bruised ego) that showed the ship as the original NX-01 Enterprise. The actual CGI model itself was too far away to be able to see any discernible markings.
So Enterprise never had a refit, that's good because it ruins a beautiful ship. Dave Blass is allowed to have his opinion but it doesn't matter to me, not on screen = not canon.

But if it was used for ceremonial purposes wouldn't that be an argument against a refit? In that case the ship wouldn't need moere power, weapons, speed or anything else a refit would provide and keeping the original look would be more important.

Of course, we already know Archer got the job as CO of the Enterprise due to nepotism because it definitely wasn't because he was a master diplomat, a scientist or anything else that would have qualified him for the mission so he probably was in flight school at 12, screwed up, was told by his dad he was the best and hated the vulcan instructors who pointed out that maybe hitting 5 other shuttles and a tree isn't worthy of praise.

it would be fun to have a novel where Henry Archer actually was a founder of Terra Prime

President Archer, uh, wanted a vanity parade and didn't care how much time and resources were wasted since money and poverty were supposedly abolished in the Federation (never mind that Malcolm Reed apparently was living in a trailer home at this time, at least he had a food synthesizer). Unfortunately Archer's ego had bloated exponentially by the time of his presidency. Phlox was so disgusted by the wasteful parade that he turned on Archer and prevented Denobula from joining the Fed--they weren't going to give up their useful genetic engineering over this nonsense.
