So why Lwaxana took her husband surname (and gave it to her daughters), something that it is seen by many as chauvinist even today and it is not even the norm in all the Earth's cultures..?
That's not an unanswered question. It's a question everybody seems to have a different answer for.
The possible explanations I usually seen (though I believe they are themselves speculation) are that she simply liked the way "Lwaxana Troi" flowed and it amused her how much choosing to take her husband's name irritated her conservative, traditionalist father.
Real world reason would of course be that the TNG writers didn't think the matter through. TNG really did apply American norms to aliens a lot.
Agreed. I liked the original torpedoes. Instead of them getting photons I would have been ok with them being able to improve the engine on the originals so they're a bit faster and more maneuverable but still not photon torpedoes.
To be fair, the photonic torpedoes installed post Xindi attack were nowhere near the strength of photons as we know them - having done a little check on Memory Alpha it is stated that they could still barely scratch a bird of prey's shields so they are more or less just a minor upgrade.
Maybe she used her own surname while they were married but changed it to Jack's surname when he died to honor and remember him.
Or maybe Lwaxana just likes to be different and buck tradition.
I've always suspected that when TNG was first created, TPTB didn't know which of Deanna's parents would be human and which would be Betazoid. They probably only nailed it down when Majel came aboard. So we really have no idea who took whose name.

There's subjective morality, and objective morality. The former is what you feel is right, and the latter is set by an external source, usually societal law or religious precept. Since the Federation is a secular polity, and Starfleet is its paramilitary branch, the most relevant sources of objective morality are Federation law and the Starfleet equivalent of the UCMJ . As far as we know, neither has anything to say about undoing an accident like the one that created Tuvix. Ergo, there is no objective morality in play, no universal standard. Just... a whole lot of different viewpoints, everything from "Janeway committed a cruel, cold-blooded murder" to "Janeway served the greater good".
Tuvix was the result of two becoming one in a transporter accident…but remember Thomas Riker was a result of the opposite. So replicate that, and the second Tuvix is split back into the original Tuvok and Neelix.
All three live now.
But the conditions that split Riker were completely unique to that planet.

Much like Tuvix, it's a mystery to me why it's never ever brought up in any discussion whatsoever.
