In the TOS episode "Menagerie" (I forget if it's part 1 or 2) we see Spock in the transporter room about to beam down with a bunch of women. An alien mentality allows only the women to beam down, leaving Spock on the transporter pad. At which point, he's scared shitless and cries out, because he doesn't want to go 5 years without their sweet comfort.

I didn't remember that. But Spock was so unvulcan in that episode that we can assume that he was playing someone else, just like Majel Barrett was.

I suppose when they made the Cage maybe Spock's characters were not yet fully developed, and hence he showed those flashes of emotions.
Or maybe we can explain it by his age / relative immaturity during his stint with Capt Pike, compared to when he worked with Kirk.

I just think of him as a different character from the Spock of TOS. A vulcanianian maybe.

In each case, he had serious and extreme reasons for lying. That definitely makes him much less of a liar than the average human.

A lie is a lie. Humans often see their lies as for "serious and extreme reasons", too.

In my defense I don't consider this to be Spock. In fact I have never seen a Vulcan played in such unvulcan a fashion.

It's canon twice over. Has to be Spock. Even Spock says it's Spock!!!

But it's canon. Those scenes from The Cage were shown in the Menagerie. Spock in the Menagerie related / showed his past, so it was established that the Spock with Capt Pike is indeed Spock's younger version.
As I said maybe he grinned and showed more emotion because he was still young and was not able to control his emotion well or still letting his human side too much
