Just because Jadzia was very well balanced, disciplined, restrained, and wise, that certainly doesn't mean they can't have made her interesting.
Picard, for example, was extremely well-balanced, disciplined, restrained, and wise, but he was an amazing character.
Maybe it was all down to the actor?
Although I suspect it has more to do with context. And it would have been nice to have seen Jadzia having more "heroic" things to do.
For example, if you place Jadzia into Captain Picard's position in any great TNG episode, she would have seemed a lot more heroic and more respectable. I think she would have fit in better with more responsibility, more leadershp, more tough decisions to make, and more of a general position of respect.
Likewise, I think if you put Captain Picard onboard DS9 doing what Jadzia did (what the hell did Jadzia do anyway?), you would have a similarly wasted opportunity.
So I think context, and role (and probably actor) have a lot more to do with it than actual character.
That's not to say I think Jadzia and Picard are comparable. Picard is, of course, legendary. But I do think there are similarities in their characters.
I certainly think someone like Picard would have been a better mate for Jadzia than Worf. For all the "tough macho Klingon" stuff Jadzia did, she herself was always very gentle and intellectual, much more like Picard in spirit.

She was also extremely interesting, and I reckon if we'd had a character like Mirror Ezri from season 1, Dax could have been an amazing character, similar to Quark, with questionable ethics.
