I am surprised no one has mentioned Captain Richard Robau. I would like to see:

Robau vs. TOS-Kirk
NuKirk vs. Archer (this would be fun since both got their asses handed to them so often!)
Seven of Nine vs. T'Pol (this MUST be a bikini/jello wrestling format... who cares who wins?!)

In the First Officer brawl, I have no doubt that Spock would beat them all.
