Why was Assignment Earth left out of the Time Travel Compiliation ? Why wasn't Twilight from Enterprise included as well ?

And I thought you'd left us, DumbDumb.
Assignment: Earth - because it's really outside the Trek Universe. Kirk and Spock could have been played by an enlightened Butch and Sundance and the story would have worked just the same.
Twilight - because it doesn't involve time travel. It all happens in linear time, abet over many years, until you hit the reset button right at the end.

It is my understanding that the fan collective was voted upon, and the episodes on the disk are the ones that won. I could be wrong, though.

Cause folks didn't want them to be on the collection, so they didn't vote for them.
Both episodes were included on the list that fans could vote for. Clearly not enough people voted for them since they weren't included.

I think it was a joke. I remember Assignment Earth was supposed to be a backdoor pilot, I don't think the rest of them were.

I seriously wanted to include that, but I felt I was pushing credibility as it is... despite Mudd seriously being considered as a TOS spinoff.
As for the series:
"The Outrageous Okona". This was going to be Firefly before there was Firefly. Only with one character, the outrageous Okona himself.
"Captain's Holiday" Everyone likes Relic Hunter, right? Well, this was going to be Star Trek: Relic Hunter, with Vash and her boy toy chasing after a new artifact every week in luscious and exotic environments.
"Rivals" Ah, Martus Mazur. What kind of shenanigans will he get up to next? Will auntie Guinan be involved?
"Think Tank" An intellectual problem poses itself to the think tank. They bicker and talk about their feelings and then set up a hastily contrived solution that somehow works.
"Favorite Son". This was going to be Firefly while there was still time to be before Firefly... ah, forget it...
