The Star Trek iceberg

All of the above. It almost never looks the same twice, it fits anything needed, spawns infinite shuttles and then near the end we learn Neelix's ship was somehow inside all along.
And then there's the mysterious "shuttlebay 2" that gets mentioned frequently on Voyager despite the fact Voyager clearly only has one shuttlebay. My favorite mention of this comes in Threshold, when Mutant Tom kidnaps Janeway, it's reported on the bridge that there's an unauthorized launch in shuttlebay 2, to which Chakotay responds with "what!?" It's funny because I've always interpreted his reaction as "how the hell can there be a shuttle launch from a bay which doesn't exist?"

Maybe they converted something to a second shuttlebay and that's where Neelixs' ship was...?

Here is where I planned on proposing the idea that Voyager simply renamed their lone Shuttlebay as "Shuttlebay Two" because "Shuttlebay One" was removed at some point during the design phase.

However, there are three instances where Shuttlebay One was mentioned (as opposed to the three where they mentioned Shuttlebay Two), that make it seem like an actual place somewhere on Voyager.

The Enterprise-D doesn't seem to have a "Shuttlebay One", per transcripts, although they have their own "Shuttlebay Two" (15 refs) and "Shuttlebay Three" (2 refs). They have a "Main Shuttlebay", which *might* be Shuttlebay One, but who knows. Voyager never referenced a "Main Shuttlebay" (unlike TNG with its nine references), but perhaps Shuttlebay Two *is* the main shuttlebay, and Shuttlebay One is just some small alcove somewhere (... that the Delta Flyer flew out of, once? I don't know).

Behind-the-scenes info just has "Shuttlebay 2" refer to a maintenance bay or hangar behind Shuttlebay 1.

In case anyone doesn't know, this was that threads culmination.

The Enterprise by Committee

I think something like the Cattlemen could have worked as an average, low-key television episode. It doesn't necessarily sound like a riveting idea for a cinematic feature, though.

This type of concept has been used in literary SF, such as Mike Resnick's short story "Old MacDonald had a farm" which appeared in the September 2001 issue of Asimov's Science Fiction.

Yeah as a "problem of the week" for an episode of pretty much any Star Trek show from TOS-ENT it could very easily worked, and, depending on the execution and the details, could have produced an interesting episode.
