Think it's simply because they wanted to use a new design for the Enterprise-G and like Night Shyamalan in his movies, letting us see it all the time without realizing it until the finale.
 
It was because Matalas liked Bill Krause’s Shangri-La ship (which I can totally understand) and wanted to replicate it for the hero ship in PIC season 3 despite its anachronistic design that no other Starfleet ships share. And yes, the plan the whole time was obviously to make it the new Enterprise in the most convoluted way possible. I think you’re giving Matalas too much credit for being ‘clever,’ though.

The ironic thing is, now that it seems that Enterprises only last for ten years or so, the reveal of the Enterprise-G is ultimately hollow because we’ll be getting the Ent-H in 2411, just in time for Federation Day.

NX-01 - 10 Years
TOS Enterprise - 40
Enterprise-A - 7-8
Enterprise-B - Unknown
Enterprise-C - Unknown
Enterprise-D - 8
Enterprise-E - at most 13 (if going by the audio logs)
Enterprise-F - 15 (If going by the Audio logs)

On average, Enterprises do not stay in service that long. The TOS Enterprise is the outlier, but it also got a complete overhaul 3/4 through its life.

Complete overhaul is a bit of an understatement, more like a total rebuild. As much of a pedantic jerk as he is, Bernd did a good job analyzing the “refit” and estimated at most only the original core space frame and structures may have survived from TOS to TMP.

I personally subscribe to the idea that the E-A is the Yorktown, NCC-1717, in which case the ship itself was probably about 25 years old at retirement as the Enterprise.

I know it is not canon, it came close, but not close enough.
 
Using the "refit" moniker isnt really right. Just a redesignation. They didn't change anything on the space frame. And Refit definition has been abused this series.

But, Terry wanted an enterprise I guess. He got it.

Excelsior 2 has some design elements but looks liked a 25th century ship.
Connie 3 is just a 23rd century design with new nacelles.
 
Let's put this in a bit more perspective:

NX-01 - 10 Years

Was decommissioned for no known reason (other than the real-world reason). No new Enterprise for 80 years.

TOS Enterprise - 40

Morrow wanted the ship decommissioned because it was '20 years old' (which wasn't remotely the case.)

Enterprise-A - 7-8

We have no idea if the A was a brand-new ship or an older ship renamed. Either way, decommissioning it at the end of TUC out of nowhere made no sense.

Enterprise-B - Unknown

Considering that there were plenty of other Excelsiors still in service by TNG/DS9/VOY, the only logical assumption is that the B was destroyed or lost rather than decommissioned.

Enterprise-C - Unknown

Was prematurely destroyed.

Enterprise-D - 8

Was prematurely destroyed.

Enterprise-E - at most 13 (if going by the audio logs)

Was prematurely ?

Enterprise-F - 15 (If going by the Audio logs)

Was prematurely ready for decommissioning for no apparent reason.


So it's not that they don't stay in service long; it's that there's no rhyme or reason for their lifespans ending.
 
I suspect the 20 years line also has to do with the fact that it had been 20 years at that point since TOS premiered, I dunno.

The gap in the enterprise history with the B and C is a wasted opportunity

Archer says it was being mothballed but it clearly was refit for active duty (possibly during the Romulan war) or as a test bed/training ship.

Im thinking you may be right. They gave it more of a "traditional" Enterprise config and aesthetic.
 
I dunno that you can truly say the NX-01 lasted only 10 years in service.

Archer says it was being mothballed but it clearly was refit for active duty (possibly during the Romulan war) or as a test bed/training ship.

The events of TATV take place after the Romulan War, in case there was confusion.

The NX-01 refit was planned for Season 5 of Enterprise, so it was gonna happen.
