If Din was picked up by Death Watch during the Clone Wars...where did they take him. Concordia? The Purge wasn't until sometime in the last ten years (relative to the show's internal time). For a foundling, he either doesn't know a lot, or Death Watch/The Children of the Watch closed them off from mainline Mandalorean society around the time the Empire came (or the Republic came to toss out Maul, then became the Empire a few days later).

Yoda. Now that the Republic has been brought back and so is child services and he is no longer hiding on Dagobah to avoid child support for Grogu they can force space ghost Yoda to come back and cut a child support check to Mando for raising his son.
Death Watch were chased off Concordia fairly early in the war, so if I had to guess it probably happened in the year or so they were on the run (remember they had an off-screen falling out with Dooku too.) Which means what was saw on the show is probably how he was raised as a foundling: in hidden coverts, always on the move. Indeed it makes sense that they'd be doing most of their "recruiting" of war orphans during this time. The war was pure chaos; they could slip commando teams into fringe skirmishes on low population worlds where the Jedi or Clones hadn't shown up to help, Swoop in, grab a bunch of "recruits" and get out again before and serious droid reinforcements showed up.
Once Maul took over, Death Watch fractured and ceased to exist, probably leaving the Children of the Watch faction either on their own, or siding with Maul (he did win the trial by combat after all. This is the way!) That state of affairs probably didn't last much past a year before the Siege of Mandalore, so the coverts likely remained where they were. They may have taken in survivors of the purge, but I doubt they were there for it.
That said, Gideon knew all about Dyn because he was the ISB officer on Mandalore during the purge, and according to Dyn the only place his family name was recorded was in the registers of Mandalore. So I guess it's possible they were there for a while at least.
Does Bo-Katan count? We already know from the trailer she's showing up in at least one episode.
Who cares? This is the Mandalorian. All characters are fair game, regardless of story. The fans need their service.
I've been watching through Clone Wars for the first time realizing a lot of characters I thought were new in Mandalorian actually came from Clone Wars. I'm curious if Moff Gideon was a preexisting character or not because he's pretty much the one I haven't come across yet.
Clone Wars has shown the darksaber make it to Maul, who was then bested by Palpatine, but it hasn't shown how it made its way to Moff Gideon after that. (I just started season 7).

Sabine takes the saber from Maul's Dathomir hideout. She later gives the saber to Bo-Katan. Gideon seemingly gets the saber when the Imperial attack on Mandalore happens, but we don't know the specific details.
