We have absolutely no idea. There's no logical reason Cavit should have left his post, let alone go running across the bridge like that, in the middle of a hostile situation.
Out-of-universe, the only reason is of course because Cavit is 1) not a main character on the show, and 2) supposed to get quickly killed so Chakotay can take over. Guess this was the quickest way the writers could kill Cavit off: by making him an incompetent jackass.

And about Cavit. I originally thought for some reason he was rushing to his chair to sit down. That makes no sense I know, but it seems the only thing he could be doing. What better place to be when the ship is attacked then putting your feet up in the First Officer's chair, most comfortable place on the bridge supposedly?
Honestly, a more fitting death scene would have been for Paris to kill Cavit in a fight, guess they didn't want to get that edgy.
Well, I don't give him too much credit for that (did he have a name by the way?). Here are two schmoes giving Paris the back of their hand and I don't believe either one even knew him personally. I think we kind of knew what kind of character Paris was going to turn out to be, any Locarno association aside.
Now the doctor had to die for obvious reasons, as did Cavit, but he was considerably more boorish and dismissive towards Paris, so he was made to look as ridiculous as possible in his headlong rush towards his demise. Yes, I think that pretty well explains the seemingly inexplicable.

On screen, no. In fact, he's listed in the credits as "Human Doctor." The novelization of Caretaker named him Dr. Fitzgerald, which seems to have stuck for most other tie-ins as well.
^ But at least Stadi did it with some finesse. She wasn't flat-out rude to Tom like Cavit and Fitzy were.

So, the EMH having trouble to choose a name thoughout the series wasn't without precedent! Too bad there wasn't a scene in the pilot with Janeway tapping her combadge "Janeway to human doctor"

Perhaps there were other nameless doctors of other species on the ship and she needed to specify.
Well, we do have a character named "Number One" from the Cage. So Human Doctor is in good company.

Janeway: It's, uh, uh - -I don't know.
Human Doctor: Nobody knows. Do you know why? Because my character isn't important enough for a last name, because I'm gonna die five minutes in.

Well, he was a fairly good looking guy as I recall. Maybe for kicks they could have given him a name like Chase Logan. Something to remember him by, poor bastard.
