Correct; there has never been another canonical design which has a Constitution II secondary hull.
The JTVFX fan video on the Battle of Wolf 359 has a recreation of that scene of the Enterprise going through the debris. Interestingly, while this version has a modified Constitution II present at the battle they have that specific hull as a Federation II-class hull (TMP refit of a Federation-class dreadnaught).
That is their personal interpretation, though there is no on screen evidence to support.

Yeah, I think the Defiant and Galaxy are the most seen hero ship classes. More Galaxies than Defiants.
Not a TMP refit version of it, no. The only time the Franz Joseph version appeared on screen was the outline of it on a display in TWOK, and those little models in Guinan's bar in PIC. And a dreadnought with the name USS Entente NCC-2120 (taken from FJ's manual) was heard in radio chatter in TMP, but it wasn't seen on screen so it could have looked different from the FJ version.
The ironic thing is that they could probably design a TMP version of the dreadnought and wouldn't get in trouble with FJ's estate, because although it would be the same configuration, it wouldn't be the same design.

I am willing to entertain a notion that Entente perhaps was at Wolf 359….but Stargazer with four nacelles was its better.
Excelsior gets the latest tech, and Hathaway gets simpler, proven tech.
A Federation II could have separated its saucer and escaped—presumed destroyed.
The saucer has its own nacelle after all….making it a destroyer equivalent on its own.
I might have had the secondary hull ram the cube on autopilot.

They used the Galaxy class CGI model in the DS9 Dominion War fleet scenes because the Enterprise-D had already been destroyed and they had the Sovereign class Ent-E, so the audience would not have been confused and thinking they were seeing the Ent-D. If the Ent-D had not been destroyed in Generations, I doubt the DS9 VFX people would have used the Galaxy model.
They did use a Galaxy-class model in “The Jem’Hadar”. A few months before it was destroyed in Generations.
Yes, but they specifically mentioned in dialogue that the ship was the Odyssey. I was referring to the random Galaxies in the Dominion war fleets.
USS Odyssey was a Galaxy-class for the "Worf Effect" with the new Dominion. Bring the strongest known starship in the Federation and have it clobbered in a fight. Much like having the new alien or godlike being toss Worf over the railing on the Enterprise bridge to show just how strong they are.
