You've completely -conveniently- ignored where I pointed out that this isn't the only time Eaves drew up painfully anachronistic designs. He did so for ENT, he has since done so with the Leondegrance, to name a couple of examples. You may not like that they don't fit the narrative you seem to want to cling to, but such is life.

it's amazing we get all these beautifully designed, unique ships now instead of whatever piece of stock footage they could take off the shelf

It would be nice that they show us Inquiry class starship in season 3 but with lot of details. In season 1 it was really bad with no details. Unifinished job. Not to forget it's the most powerful ship that Starfleet put in service til 25th century. I'm really impressed with it.

I use to until I studied spaceship designs and discovered all the grim realities of those.I guess due to my growing up with TOS, my preferred preference will always be with starships that have round primary hulls rather than overtly oblong or oval.
