We have no indication the Republic was a cadet training ship in TOS, just that Kirk served on it early in his career. Maybe they can just reuse the Discovery bridge, or restore the Shenzhou, or hop over to SNW and borrow their bridge and keep the crusty old Republic a thing.

i recall the Stargazer was going to be a Constitution Class but was changed to Constellation class at the last minute
speaking of ships, i do hope we see more non-Earth Federation designs in Starfleet Academy
It would make sense. The past two seasons implied that most of what Starfleet has are pre-burn ships. Even in S4, Raynor mentions his ship is using tech from then. Starfleet doesn't really seem to have been building ships for about a century, so they're going to need more. Makes alot of sense for the other members to contribute ships, although realistically building new ships shouldn't really be much of an issue for them.
ya i just want to see more of the plurality ST preaches about in their ship designs, instead of the millionth variation on saucers and nacelles

Yeah I feel like there's actually not much in the way of money saving happening here, aside from moving on to a new, less expensive cast for a new show.
I mean, I can't imaginr the VFX will be at Disco levels.
